標(biāo)題: 檸檬酸會競爭性螯合鈣
有研究表明，日糧中添加檸檬酸時(shí)，與植酸酶會有協(xié)同作用。推測其機(jī)理是，檸檬酸會與植酸競爭性的螯合鈣，因此不易形成植酸鈣復(fù)合物，所以對植酸酶發(fā)揮作用有利。
